コロンビアは、FNC※1主導の世界第三位の生産国です。
スペシャルティコーヒーに関しては、近年COEのコロンビアが登場してはおりますが、それ以外には、安定し、かつ素晴らしい品質のコーヒーは非常に少ないのが現状です。
コロンビアは年中どこかの産地で収穫が行われている稀な産地ですが、最南端のナリーニョ地域は、コロンビアの中でも最も良質かつ特徴的なコーヒーが生産されることで有名です。
その名前は、コスタリカのトレスリオス、ケニアのニエリ、スマトラのリントンなどと並んで世界の最も良質なコーヒーの中に数えられるものです。
赤道が近いこの地域では、標高が高いだけでなく、小高い山が多く、大半が傾斜地なため、水捌けや風通しが良く、また、東西南北を走る主要河川が豊富な水源となっており、高標高で安定した生産が可能となっています。
昨今、新しい精製方法が盛んに取り入れられ特徴的なフレーバーをもつコロンビアンコーヒーを目にしたり飲む機会が増えましたが、こちらのナリーニョのコーヒーはクラッシックなその土地そのままのフレーバーをもった様なコーヒーに仕上がっています。
デイリーに飲める飽きのこない、定番にしたくなるようなコロンビアンコーヒーを日々の何気ないけど大切な瞬間と共にお楽しみください。

※4投に分けてお湯を注ぐ。
1投目：30g のお湯。40秒の蒸らし
2投目：合計90gまで湯を注ぐ。
3投目：お湯が下がり、コーヒーの表面が見えてきたら合計150gまで湯を注ぐ。
4投目：再度お湯が下がり、コーヒーの表面が見えてきたら合計210gになるまで注ぐ。
落ちきったら抽出終了。
