産地や精製所によって個性がかわりますが、ケニアから届くコーヒーはいつもケニアらしさを欠かさない個性を持ち合わせていると感じます。
そこには昔ながらの伝統的かつ丁寧な生産が行われている事、その土地の風土や自然環境があってこそなのでしょうね。
ケニアでは、村の中に水洗工場があり、そこに生産者がチェリーを搬入し、手選別を行うそうです。その後に水流比重選別式パルパーによる皮むき、発酵工程、ソーキング（綺麗な水に一昼夜浸漬）、水路での水洗、アフリカンベッド（棚）でのパーチメントの天日乾燥、パーチメントの安定化（30～40日程度木製サイロで寝かせる工程。風味の安定の為実施。）を経て、脱穀精製されます。
コーヒーの木を育てる段階から手をかけて育てたものが高い品質を保つのでケニアのコーヒーならどれでもケニアらしさを感じられる訳ではないそうです。
ケニアのロット全てが良質な特徴を持つケニアコーヒーではなく、品質には格差があり、品質マインドの高い生産者、栽培、施肥管理、収穫、生産処理、選別が大きく影響するそうなので、良質なケニアコーヒーには多大な労力を要します。

Kii水洗工場は、キリニャガ地域東部に位置する、1953創業（老舗ですね！)のルンゲト農協が所有する3つの水洗工場のうちの一つです。キイ水洗工場は1995年に創業し、現在は1214名が加盟しているそうです。
収穫された完熟チェリーは更に選別され、その日のうちに水洗工場に運ばれ、近隣の河川から供給される豊富な水源によって精選処理が行われます。
歴史と恵まれた土地、そしてたくさんの丁寧から生まれたケニアのコーヒーを全身で味わって様々な情景を想像して、想いを馳せてください。

It is a mixture of red and black berries with a gentle sweetness.
The character of the coffee varies depending on the region and processing, but I feel that the coffee from Kenya always has its own character without losing its Kenya character.
This is probably due to the traditional and careful production, the local climate, and the natural environment.
In Kenya, there is a washing station in the village, where the growers bring the cherries in and sort them by hand. This is followed by hulling using a water-flow gravity-sorting pulper, fermentation process, soaking (soaking in clean water for one day and night), washing in waterways, drying of parchment in the sun on African beds, and stabilization of the parchment (a process where the parchment is laid down in wooden silos for 30-40 days, to stabilize the flavor, which is then carried out in the silos). This is done to stabilize the flavor). The parchment is then threshed and refined.
The quality of Kenyan coffee is high when the coffee trees are carefully nurtured from the growing stage, so not all Kenyan coffee has a Kenyan character, according to the company.
Not all lots of Kenya coffee have good quality characteristics, and there are differences in quality, and the quality minded producers, cultivation, fertiliser management, harvesting, production processing and sorting have a great influence, so a lot of work is required for good Kenyan coffee.

Water / お湯 : 210g
Temp / 温度 : 92°
Grind Size / 挽き目 : 粗挽きコショウ程度
※4投に分けてお湯を注ぐ。
1投目：30g のお湯。40秒の蒸らし
2投目：合計90gまで湯を注ぐ。
3投目：お湯が下がり、コーヒーの表面が見えてきたら合計150gまで湯を注ぐ。
4投目：再度お湯が下がり、コーヒーの表面が見えてきたら合計210gになるまで注ぐ。
落ちきったら抽出終了。
